Silva'S Chicken
- 6 chicken breasts (about 2 lbs)
- 3 Roma tomatoes
- 1 bunch scallions (green onions)
- 1 wedge Fontina cheese
- 2 cups Red Wine Vinegar
- 1 cup Extra Virgin Olive Oil
- 1 cup Italian Style Bread Crumbs
- 2 eggs (or liquid eggs)
- Freshly ground black pepper
- -Chicken
- Pound chicken breasts to uniform thickness to tenderize.
- Dip chicken in egg wash and coat with bread crumbs.
- Pan fry on medium heat until golden brown, set aside on baking sheet.
- Bake chicken at 350 for 20 minutes.
- -Sauce
- Slice tomatoes into 1/4 slices.
- Chop 3 scallions (1/4 from bottom, up 4 inches)
- In a 4-5 cup container, combine tomato slices, chopped scallions, 2 cups red wine vinegar, 1.5 cups olive oil, ground black pepper. Mix thoroughly.
- When chicken is done, cover chicken with tomato slices, drizzling a few teaspoons vinegar/oil sauce on chicken as well. Reinsert chicken in oven for 10 minutes. When tomatoes are wilted, cover chicken with slices of Fontina cheese. Bake for 5 minutes until cheese is melted.
- Serve over rice.
