Silva'S Chicken

  1. -Chicken
  2. Pound chicken breasts to uniform thickness to tenderize.
  3. Dip chicken in egg wash and coat with bread crumbs.
  4. Pan fry on medium heat until golden brown, set aside on baking sheet.
  5. Bake chicken at 350 for 20 minutes.
  6. -Sauce
  7. Slice tomatoes into 1/4 slices.
  8. Chop 3 scallions (1/4 from bottom, up 4 inches)
  9. In a 4-5 cup container, combine tomato slices, chopped scallions, 2 cups red wine vinegar, 1.5 cups olive oil, ground black pepper. Mix thoroughly.
  10. When chicken is done, cover chicken with tomato slices, drizzling a few teaspoons vinegar/oil sauce on chicken as well. Reinsert chicken in oven for 10 minutes. When tomatoes are wilted, cover chicken with slices of Fontina cheese. Bake for 5 minutes until cheese is melted.
  11. Serve over rice.
