Not Too Shabby Chicken Salad
- 4 boneless/skinless chicken filets (shredded)
- 3 stalks of celery (finely chopped)
- 1 cup of carrots (finely chopped)
- 1 handful of pecans (chopped)
- 1 tsp. pepper
- 1 tsp. salt
- 1 Tbl. spn. lemon juice
- 1 cup mayo or miracle whip
- also good to throw in:
- cilantro, onion, and green pepper (finely chopped)
- Boil the chicken. Remove from water. Shred the chicken (use a fork and your clean hands and rip it apart!). Chop the celery, carrots and anything else you want. Add everything, except for mayo/miracle whip, and stir thoroughly. Add mayo/miracle whip slowly and use more or less for desired consistency. Salt and pepper to taste. The best thing about this recipe...you can't mess it up.
