Evoyn'S Red Beans And Rice

  1. Pick beans and cover with water. Soak overnight.
  2. Drain beans. Place
  3. intoup pot with ham hocks, onions, celery and bell pepper.
  4. Cover
  5. with
  6. coldtater.tover
  7. pot
  8. and bring beans to a
  9. boil.
  10. Then turn down heat to a simmer.tet beans simmer 2 1/2 to
  11. 3
  12. hours over low heat, adding more water if necessary, to keep
  13. beans
  14. from
  15. sticking.
  16. Remove ham hocks, onions, celery and
  17. bell peppers.temove some beans from the pot and mash
  18. them. Return mashed beans to pot and stir.
  19. (If more beans
  20. need
  21. to be mashed to achieve desired consistency, do so.) Serve hot over cooked rice.
  22. Serves 8.
