Spiced Pecans

  2. Preheat the oven to 350F. Spread the nuts in an even layer on a rimmed baking sheet and toast until fragrant, 10-15 mins (I use parchment paper underneath)
  3. Melt the butter in a small saucepan or microwave. Stir in the maple syrup and vanilla.
  4. Transfer the toasted nuts to a large bowl. Add the brown sugar, cayenne, and salt and toss to combine. Drizzle with the butter mixture and toss to coat. Taste and add tabasco or more salt as needed.
  5. Spread the coated nuts on the baking sheet lined with parchment paper in an even layer and bake for 10-12mins, stirring once during the last five mins.
  6. They will look rick, dark, and caramelized.
  7. Let cool slightly in the pan on a wire rack before breaking up into pieces.
