Gluten-Free Granola
- 5 cups steel cut oats (John McCann Steel Cut is perfect, NOT quick cook or instant kind)
- 2 cups sliced almonds
- 1 cup raisins
- 1/2 cup dried cranberries
- 1/2 cup dried cherries
- 1/2 cup dried apricots
- 3/4 cup sweetened shredded coconut
- 1/2 cup milled flaxseed
- 1 cup honey (if using sweetener, only use 3/4 cup honey)
- OPTIONAL: 1 tsp. natural sweetener (Truvia or Stevia)
- 1 tsp salt
- 1/2 cup vegetable oil
- Preheat oven to 250 degrees. In large bowl mix oats, sliced almonds, milled flaxseed, shredded coconut, and salt.
- In a separate large bowl, mix vegetable oil, honey, and if using, sweetener. Add dry ingredients into this bowl and mix all together until dry ingredients are covered evenly by vegetable oil mix. Spread granola evenly on nonstick cookie sheet with sides (one without sides will work too, but sides help with mixing and less mess to clean up). Bake for an hour and a half, stirring granola every 15 minutes.
- After granola is done baking, add raisins, cranberries, cherries and apricots while it's still warm.
- Serve with vanilla yogurt, ice cream, or milk.
