Holiday Fruit Salad
- 1 (15 1/2 oz.) can crushed pineapple, drained
- 1 (8 3/4 oz.) can sliced peaches, drained and chopped
- 3 oranges, peeled and sectioned
- 1 large apple, cored and chopped (unpeeled)
- 1 banana, chopped
- 1/2 c. maraschino cherries, halved and drained
- 1/2 c. chopped pecans
- 1 egg yolk, beaten
- 1 Tbsp. sugar
- 1 Tbsp. vinegar
- 1 Tbsp. butter or margarine
- 3/4 c. miniature marshmallows
- 1 c. frozen whipped topping
- Combine egg yolk, sugar, vinegar and butter in a small saucepan; cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
- Remove from heat; add marshmallows, stirring until melted.
- Cool.
- Stir in whipped topping.
- Pour dressing over fruit; toss gently until well coated. Yield:
- 8 servings.
