Chili De San Miguel
- 8 - 10 lbs. ground beef
- 2 -3 lbs. ground Italian sausage
- 5 large onions, chopped
- 6 long green chiles, roasted, skinned
- 5- 29 oz. cans peeled tomatoes, mashed
- 5- 29 oz. cans crushed tomatoes
- 3- 12 oz. cans Rotel original tomatoes, chopped
- 5- 29 oz. cans chili beans
- 10- 16 oz. cans pinto beans, jalapenos optional
- 10- 16 oz. kidney beans
- 2 oz. ground cumin
- 3 oz. chili powder
- 1 1/2 Tbsp. green tabasco
- 1/4 c. salt
- Saute onions.
- Brown meats.
- Add all ingredients to a 40 quart pot.
- Heat slowly, stirring often.
- Simmer for at least 3 hours. Do not let it scorch.
- Serve with favorite toppings (onions, cheese, crackers or Fritos).
