Sweet And Sour Turkey
- 1 1/2 lb. boneless turkey, cut in 1/2-inch cubes
- 1/4 c. soy sauce
- 1 egg, slightly beaten
- 3/4 c. cornstarch
- 1 1/2 c. vegetable oil
- 1 small onion, cut into 6 wedges
- 1 (8 oz.) can pineapple chunks, drained (reserve juice)
- 1 bag mixed vegetables
- 1/2 c. salad vinegar
- 1 Tbsp. vegetable oil
- 1 Tbsp. brown sugar
- 1 tsp. ground black pepper
- 2 tsp. cornstarch, dissolved in 4 tsp. water
- Toss turkey cubes in soy sauce; roll in egg, then in cornstarch, shaking off any excess cornstarch.
- Preheat 1 1/2 cups oil in wok at 375u0b0.
- Add turkey in 4 batches, frying until golden brown.
- Remove turkey.
- Remove all but 1 tablespoon oil from wok. Add onion and bag of vegetables.
- Stir-fry 2 to 3 minutes.
- Push up side.
- Add pineapple; stir-fry 1 minute and push up side. Combine pineapple juice, salad vinegar, brown sugar, oil, soy sauce and pepper.
- Add to wok and bring to a boil.
- Add cornstarch mixture, stirring until thickened.
- Return turkey to wok and combine all ingredients.
