Jamaican Wet Rub
- 8 Green Onions
- Habaneros 4-6 good 8-10 is ire mon.
- 2T Peanut oil or your preference
- 3 garlic cloves
- 1C brown sugar (I usually use 1/2)
- 2T Smoked Paprika
- 2-3t Thyme - Fresh is best
- 2t basil fresh
- 2t ground ginger (if you use fresh grate finely about 1T)
- 2t ground corriander
- 1t chili powder - either generic or take your pick
- 1/2 t each allspice, cinamon, ground cloves, ground cumin, ground nutmeg, black pepper
- 1t salt
- 1/2 t lime juice.
- Whirl in a blender or pound in a mortar until you have a thick paste.
- Add tamarind to taste if you like some tang.
- Marinate some meat for overnight then grill and drink some rum.
- You can also char the green onions on a grill for a twist.
