Spicy Thai Coconut Hummus
- 1 can garbanzo beans
- juice of 1 lemon
- 2 tablespoons of tahini
- 1 tablespoon of safflower oil
- 2 tablespoons of coconut oil
- 1 tablespoon of organic tamari
- 1 tablespoon of Asian chili paste (garlic paste)
- 4 cloves of garlic
- 2 teaspoons of lemongrass paste
- 1 teaspoon of red wine vinegar
- 1 teaspoon of freshly grated ginger
- 1/4 teaspoon of ground coriander
- 1/2 teaspoon of cumin
- 1 generous pinch of sea salt
- 2-4 tablespoons of sriracha for added spice
- Cardamom for garnish
- 1. Add all ingredients to foos processor and blend.
- 2. Serve with fresh veggies, crackers, crusty bread, vegan naan, tortilla, etc. and enjoy!
