The Ultimate All Star Bean Dip
- 2 cans Great Northern, white, or cannelloni beans rinsed
- 1 head of garlic (yes,. the whole head) (you can use roasted garlic or raw-chopped)
- 1 sweet onion chopped
- 1/3 - 1/2 cup olive oil (Divided) to taste
- 2-4 anchovies ( or you can use anchovy paste)
- 1/4 tbs ground rosemary
- 1/4 cup fresh chopped parley (Divided)
- Salt and pepper to taste
- In a frying pan heat most of the olive oil olive oil, add onion until soft, add garlic and anchovies until anchovies have fallen apart and the garlic is soft. Let this cool. In a food processor add beans and everything in the cooled frying pan, rosemary, and blend. Salt and pepper. Beans love salt to be generous. Add more oil if needed to get desired consistency. Add most of the parsley at last few seconds of blending. Spoon into serving dish and top with remaining parsley, remaining olive oil, and salt the top. Serve with Pita bread, pita chips, tortilla chips, tortilla bread, or bread crisps.
