Pig Loin With Marsala Wine

  1. this is cheap and simple recipe. With a simple salad as side dish it makes up a tasty and fairly light dinner. Buy pig loin in thin slices; the thinner the better. Cover each slice in flour, press the slices and the flour so that each slice is well covered and the flour 'sticks' but gently shake excess flour from each.
  2. In a wide pan melt enough butter to cook the loin slices. Keep fire low and gentle. After 2 or 3 minutes turn each slice around and cook the 2d side for 3 more mins. When done add a large glass of marsala wine and keep moving the pan to soak all slices well. Be careful, the wine might catch fire so keep your face away! Don't worry though, flambee slices will be even more tasty! After 2 minutes approx. turn the fire off, add salt and pepper. Serve hot. If there is enough butter juice from the meat you may use it as condiment for the salad so you won't need to use olive oil...enjoy!
