Broccoli And Cauliflower With Lemon And Garlic
- 1 large head broccoli
- 1 large head cauliflower, separated into small pieces
- 4 to 6 Tbsp. light bodied olive oil
- 1/2 c. water or chicken stock
- salt and freshly ground pepper
- juice of 1 lemon
- 1/2 tsp. finely grated lemon zest (optional)
- 4 garlic cloves, chopped
- Slice tender stems of broccoli in thin rounds and break florets in small pieces.
- Rinse broccoli and cauliflower in cold water; drain thoroughly.
- Over medium high heat, saute garlic in oil and cook until golden.
- Remove garlic and set aside.
- Increase heat to high and add vegetables.
- Stir-fry 2 minutes.
- Add water and mix well.
- Cover and cook until vegetables are crisp-tender, about 2 to 3 minutes.
- Uncover and cook until remaining liquid evaporates.
- Add salt and pepper.
- Mix in garlic and lemon juice. Sprinkle with lemon zest.
- Makes 8 to 10 servings.
