Annie'S Awesome Curry
- 2.5 pounds chicken thighs cubed
- 2 tablespoon coconut oil
- 1 teaspoon salt
- 2 cups onions, chopped
- 4 cloves garlic
- 2 tablespoons fresh ginger, finely grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground corriander
- 1 teaspoon ground tumeric
- 1 teaspoon ground cayenne
- 1 teaspoon gara masala (used at end of cooking)
- 28 ounce canned chopped tomatoes
- 1 can coconut milk
- 4 tablespoons chopped cilantro (half as garnish)
- 2 tablespoons Sambal Oelek (to taste)
- 8 wedges Large lime cut in wedges
- Heat the coconut oil in a wide deep pan and add the salted chicken cubes and leave them undisturbed to brown a bit. Remove them to a separate bowl. Add the onions, garlic and ginger to the pan and cook until translucent, about 5 minutes or so.
- Add the spices (except the gara masala,) and cook for a couple of minutes, then add about a 1/4 cup of water to lift the spices from the bottom of the pan.
- Add the can of chopped tomatoes, and then the coconut milk and 2 Tbs of the cilantro.
- Add back the chicken and the Sambal Oelek and gara masala. Simmer for about an hour on low heat.
- Adjust salt and add more Sambal Oelek to increase the heat.
- Serve on rice with lime wedges and garnish with remaining chopped cilantro.
