Shrimp (Or Seafood) Lasagna
- 1/2 pound Lasagna noodles - I prefer homemade as it cooks much faster and is SO much tastier
- 1 pound Fresh shrimp (shelled and deveined) or other seafood (crab, lobster, scallops) or combination
- 2 cups Lobster, clam, or shrimp stock
- 1 cup ricotta cheese
- 1 egg
- 1 dashes salt, pepper, spices
- 1/2 cup milk or cream
- 1/4 cup butter
- 1/4c cup flour
- 3-4 cloves garlic
- Precook lasagna noodles if using packaged
- In heavy pan, melt butter, stir in flour until a smooth roux forms
- Add seafood stock to roux and simmer until thickened
- Add milk to pan and blend - simmer until desired consistency
- Mix ricotta and egg - season as desired
- Layer noodles, sauce, cheese mixture, and seafood in alternating layers
- Bake at 375 approx 30 minutes
