Just A Little Spicy Apple Chicken Breasts
- 4 chicken breasts cut in 1 inch thick fajitas
- 1/2 cup olive oil
- 1 cup apple vinegar
- 4 dry ancho chiles cut in strips
- 2 dry guajillo chiles cut in strips
- 4 apples cut in 8 pieces each
- salt
- You can find the dry chiles in any latin market.
- Pour the olive oil and the apple vinegar in a medium skillet over medium heat. Add both chile ancho and chile guajillo strips and stir.
- Add the chicken fajitas and salt them to taste and cover for about 8 minutes.
- Remove cover and add the apple pieces. Toss all the ingredients making sure the chicken is well cooked.
- Cover for another 4 minutes and remove from heat.
- Serve it with white rice or mashed potatoes as a side dish.
