Orange-Pineapple-Cheese Delight
- 1 (6 oz.) pkg. orange jello
- 1 (20 oz.) can crushed pineapple, drained (reserve juice)
- 1 c. sugar
- 2 1/2 c. juice (reserved pineapple plus orange juice)
- 1 c. cottage cheese
- 1 c. diced celery
- 2 c. whipped topping
- 1/4 c. mayonnaise
- juice of 1 lemon
- 1 c. shredded Cheddar cheese
- 1/2 to 1 c. chopped nuts
- Put drained pineapple, sugar and lemon juice in saucepan over medium heat, stirring constantly.
- Bring to boil and stir in jello until dissolved.
- Remove from heat.
- Add mixed juice.
- Chill until it starts to gel.
- Fold in remaining ingredients.
- Pour into a 9 x 13-inch Pyrex pan.
- Chill until set.
- Cut in squares to serve on a lettuce leaf.
