Custardy Apple Squares From Boston Globe
- butter for pan
- 3 med juicy sweet apples such as gala or Fuji
- 1/2 c flour
- 1 t baking powser
- 2 eggs
- 1/3 c granulated sugar
- pinch of salt
- 2 t vanilla extract
- 2TB unsalted butter, melted and cool but still liquid
- confectioners sugar (for sprinkling)
- 6 TB whole milk
- 1. Set oven at 400
- butter an 8 inch square baking pan and line bottom with parchment
- 2. peel apples, slice them thinly
- 3.in bowl, whisk the flour and baking powder to blend
- 4. in large bowl, whisk eggs, granulated sugar and salt for 2 minutes. Whisk in vanilla, then the milk and melted butter. Add the flour and whisk until the batter is smooth. Gently fold in apples until each apple is coated with batter.
- 5. scrape the batter into pan
- 6. bake cake for 40-50 minutes or until is golden and uniformly puffed. Cut into squares and dust with sugar
