Fried Tuna Cakes In Ginger-Wasabi Dressing Over Mixed Greens
- 1 7 oz. can Albacore Tuna
- 4 tablespoons Corn Meal Mix
- 1/2 stalk Celery
- 2 teaspoons Lemon Pepper Seasoning
- 1 dash Lime Juice
- 2 tablespoons Mayonnaise
- 4 dashes Hot Sauce (i.e. Tabasco)
- Olive Oil
- Paprika
- Sliced Lemon
- Ginger-Wasabi Dressing
- 2 handfuls Assorted Mixed Greens
- Chop Celery into fine pieces
- Heat skillet to medium-high heat and add olive oil, let stand.
- Combine Tuna, Mayonnaise, Hot Sauce, Lime Juice, and Lemon-pepper seasoning in small salad bowl. Mix thoroughly with spoon until consistent.
- Add Corn Meal Mix. Add Olive Oil to preferred consistency and mix until consistent.
- Separate mixed ingredients into two (2) ball-shaped "cakes" and press firmly into oiled section of skillet until flat and round (1 inch thick by 4-5 inches width). Let fry for 1-2 minutes, flip both, let fry for another two minutes.
- Place two handfuls of Mixed Greens on salad plate and gently place finished Tuna Cakes on greens. Add dashes of Paprika and splashes of squeezed Lemon to Tuna Cakes. Gently run Ginger-Wasabi Dressing - in lines - over salad and cakes.
- Serve and enjoy!
