Quick, Easy, Foolproof Rice And Beans

  1. Bring stock to a boil.
  2. Add pinch of saffron bring to medium heat and stir until saffron blooms.
  3. Add oregano, onion powder and cumin.
  4. Stir and add rice.
  5. Cover and simmer until all liquid is absorbed which is approximately 20-30 minutes.
  6. Add salsa, chile, beans, peppers, bring heat to low and stir to avoid sticking (this is just to heat all ingredients through).
  7. Serve with grated cheese on top or solo.
