Tabouli
- 1 Cup Bulgar
- 2 Cups boiling water
- 2 beef steak tomates, diced
- 1 european cucumber, diced, but NOT peeled
- 1 Vidalia onion, diced
- 1/4 cup chopped mint
- 1/4 Cup chopped italian parsley
- 1/2 tsp. kosher salt
- 1/4 tsp. ground pepper
- 1/4 cup freah lemon juice
- 1/2 cup extra virgin olive oil
- put bulgar in a bowl and cover with 2 cups boiling water. Set aside for minumum 2 hours. Most of the water will be absorbed by the wheat. After 2 hours squeeze any excess water from the bulgar and place it in a bowl. Next add the diced vegetables & herbs. Toss and add the salt & pepper and the juice and oil. Let marinate for at least 1 hour prior to serving. Serve at room temperature or slightly chilled. Refrigerate unused portion. You can prepare this refreahing and healthy side dish a day ahead. It will keep in the fridge for up to 5 days.
