Ham And Cheese Chicken Rolls
- 4 skinless, boneless chicken breasts
- 4 thin slices cooked ham
- 4 thin slices Swiss cheese
- 2 Tbsp. vegetable oil
- 1 can cream of broccoli soup
- 1/3 c. milk
- 1/4 c. sliced green onions
- 1/8 tsp. dried thyme leaves, crushed
- chopped parsley (for garnish)
- Flatten chicken to even thickness, using the palm of your hand. Place ham slice on each breast.
- Place cheese on top of ham.
- Roll up each chicken breast; tuck in ham and cheese.
- Secure with wooden toothpicks.
- Heat oil in 10-inch skillet.
- Cook chicken rolls for 10 minutes, or until browned.
- Remove excess oil from pan.
- Stir in soup, milk, thyme and onions.
- Cover and cook for 10 minutes, until chicken is no longer pink.
- Remove toothpicks to serve.
- Spoon sauce over chicken.
- Garnish with parsley.
