Mexican Lime Chicken
- 1 c. water
- 1/3 c. teriyaki sauce
- 2 Tbsp. lime juice
- 2 tsp. minced garlic
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 chicken breast fillets
- 1 c. shredded cheddar monterey jack cheese blend
- Mix marinade ingredients in a medium bowl.
- Add the chicken and chill for 2 hours. Preheat oven to high broil.
- Cut the chicken into strips for faster cooking under broiler; cook until done.
- When done, arrange the chicken in a baking pan.
- Spread a layer
- of Mexi-ranch dressing on each portion of chicken, followed by 1/4 c. of the shredded cheese.
- Broil for 2 to 3 minutes, or just until the cheese has melted.
- To serve, spread a bed of tortilla strips on each of 4 plates.
- Slide a chicken portion onto the chips and serve with your favorite rice or other Mexican dish. Serves 4.
