Tabouli
- 1 cup bulgur
- 1 cup boiling water
- 1/4 cup olive oil
- 1/3 cup lemon juice (2-3 lemons)
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/2 teaspoon dried oregano leaves
- dash cayenne pepper
- 1/4 cup green onions. chopped
- 1 small bunch fresh parsely, chopped
- 2 large tomatoes
- 1 2.25 oz can black olives, chopped
- In medium bowl, pour boiling water over bulgur. Let sit for 30 minutes. Mix in a shaker the oil, lemon juice, salt, garlic powder, oregano and cayenne pepper, then shake well. Mix bulgur and vegetables, pour in dressing and stir well.
- Best if refrigerated several hours before serving.
- Can be doubled easily, but I don't double the dressing.
