Nonna D'S Almond Cookies
- 4 eggs
- 1-1/2 cups sugar
- 1 lb pkg Crisco shortening
- 2 Tbsp Almond extract
- 2 Tbsp Lemon extract
- 5-1/2 cups all-purpose flour
- 4 tsp baking powder
- 1 pkg vanilla sugar
- 1 lb slivered almonds, crushed with rolling pin
- Preheat oven to 350 deg. F
- Beat eggs and sugar with mixer for 10-15 minutes. Gradually add shortening and continue to beat until well mixed. Add next 4 ingredients, continuing to beat by hand. If dough is too soft, add more flour. Allow dough to stand 30 minutes before assembly.
- Take 1 tsp dough and roll into ball. Roll in water then roll in sugar and then roll agin in crushed almonds.
- Place rolled dough onto baking sheet that has been oiled and floured (or use parchment paper). Repeat for remaining dough.
- Bake at 350 for 10-12 minutes.
