Cranberry Nut Bread
- 1 Tbsp. oil
- 1/3 c. brown sugar
- 1 1/2 c. buttermilk
- 1 egg, lightly beaten
- 1 c. whole wheat flour
- 1 c. unbleached flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 Tbsp. walnuts, chopped
- 1 c. cranberries, finely chopped
- Preheat oven to 425u0b0.
- Lightly coat a 5 x 9-inch loaf pan with nonstick cooking spray.
- In a large bowl, mix oil and sugar.
- Add the buttermilk and beaten eggs, stirring until smooth.
- In another bowl, combine the remaining ingredients and add to the liquid mixture, stirring just until the batter is moistened.
- Don't overmix it.
- Pour the batter into the prepared pan and bake for 30 minutes or until golden brown.
- Yields 18 1/2 slices.
