Cranberry Nut Bread

  1. Preheat oven to 425u0b0.
  2. Lightly coat a 5 x 9-inch loaf pan with nonstick cooking spray.
  3. In a large bowl, mix oil and sugar.
  4. Add the buttermilk and beaten eggs, stirring until smooth.
  5. In another bowl, combine the remaining ingredients and add to the liquid mixture, stirring just until the batter is moistened.
  6. Don't overmix it.
  7. Pour the batter into the prepared pan and bake for 30 minutes or until golden brown.
  8. Yields 18 1/2 slices.
