Taste Of Summer Green Bean Salad

  1. Blanch in salted boiling water for only 1-2 minutes & cool green beans in an ice bath. Strain & make sure they are dry.
  2. Toss all ingredients through the basil, reserving the 1/4 c. toasted pine nuts.
  3. Whisk vinegar, oil, garlic, dijon & sugar to combine and toss with green bean mix.
  4. Let marinate for up to an hour and serve over mixed baby greens & top with the reserved pine nuts.
