Andi'S Spicy Velvetta Cheese And Meat Dip

  2. Dice onion, and add to 1/2 stick butter in a large crock pot on high heat. Cube Kraft Velveeta Cheese and add to mixture in crock pot. Open, and add two cans of un-drained Rotel mix (One Hot, One Original makes a nice mix but you can also use different combinations like two mild etc to control the heat in your dip). Mix well, and cover with lid.
  3. In a large saucepan crumble hot breakfast sausage, and lean ground beef. Cook on Med-High heat until brown, breaking into fine pieces with a spatula, and stirring frequently.
  4. Turn off heat, and drain fat from pan. Add meat to mixture in crock pot. Stirring until thoroughly mixed. Once thoroughly melted and warm, add additional butter if necessary to achieve a thinner consistency.
  5. Add a dash of Cayenne Pepper, and ground black pepper and salt to taste.
  6. Keep on low heat, turning off occasionally if cheese is browning around the sides and the crock pot is keeping the temperature too high. Serve with Tortilla chips and vegetables such as celery, and broccoli.
  7. Serves many. (20 people might be about 4oz serving each aka 1/2 cup). Calories included for cheese dip only and not the chips or veggies you dip with them.
