Roasted Salmon And Green Beans With Mango Salsa
- For the mango salsa
- 2 ripe mangoes, peeled, pitted, and diced small
- 1 red pepper, seeded and diced
- 1 ripe tomato, diced
- 1 shallot, minced
- 1 jalapeno pepper, seeded and diced
- 1 heaping tbsp. apricot jam
- 3 tbsp. lime juice
- 1 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- salt and pepper
- For the salmon and green beans
- 4 salmon fillets with skin
- 1 lb. green beans
- 3 tbsp. olive oil
- salt and pepper
- Preheat oven to 450 degrees. Mix salsa ingredients, stirring until jam dissolves. Add salt and pepper to taste. Pour olive oil in large shallow baking pan. Rinse and dry salmon fillets and place in roasting pan. Turn to coat well with oil; season with salt and pepper. Place fillets close together on one side of pan, skin side down. Rinse and dry green beans, then trim ends. Place green beans on other side of baking pan. Roast salmon and green beans for 15 minutes in preheated oven. Place a salmon fillet on each plate. Top salmon with mango salsa. Serves four.
