Jamming Jambalaya

  1. 1. Heat olive oil in a large, nonstick skillet over medium high heat until hot. Add pepper and onion, saute until tender crisp.
  2. 2. Stir in remaining ingredients except rice. Bring to a boil. Reduce heat, and simmer about 5 minutes (until shrimp turns pink), stirring occasionally.
  3. 3. Stir in rice. Continue cooking until the liquid is absorbed and rice is cooked.
