Jamming Jambalaya
- 1 t olive oil
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 2 14 oz can stewed Italian-style tomatoes, undrained
- 12 oz package frozen, ready to eat medium shrimp, thawed and drained
- 8 oz reduced fat, fully cooked turkey sausage, slicied and quartered
- 1 t dried Italian seasoning
- 1/4 t hot pepper sauce (optional)
- 4 c rice, cooked
- 1. Heat olive oil in a large, nonstick skillet over medium high heat until hot. Add pepper and onion, saute until tender crisp.
- 2. Stir in remaining ingredients except rice. Bring to a boil. Reduce heat, and simmer about 5 minutes (until shrimp turns pink), stirring occasionally.
- 3. Stir in rice. Continue cooking until the liquid is absorbed and rice is cooked.
