Grilled Turkey & Brie Sandwich
- 12 to 16 ounces sliced white turkey meat
- 8 slices firm white bread
- 8 ounces or more Brie cheese, cut into 16 slices
- 4 to 6 tablespoons whole-berry cranberry sauce
- 2 cups arugula or other bitter greens
- Divide the turkey evenly among 4 slices of bread. Top with slices of Brie, then spread lightly with cranberry sauce. Add greens, avoiding any overhang beyond the bread.
- Close the sandwiches with the remaining 4 slices of bread and grill either in a panini press or waffle iron, or by placing the sandwiches in a heavy skillet and weighing it down with another skillet or a brick wrapped in aluminum foil. Cook on top of the stove over medium heat or in a hot oven until bread is golden brown on both sides and the cheese is melted.
- To serve, cut in half diagonally.
