Mushroom And Chicken Tourtiere
- 1 lb ground chicken or turkey
- 1 c. chopped onion
- 1 clove garlic, minced
- 1 tbsp oil
- 8 oz mushrooms, sliced
- 1 c. chicken stock
- 3/4 c. fresh breadcrumbs
- 1 bay leaf
- 1/2 tsp EACH thyme, marjoram, and salt
- 1/4 tsp EACH ground cloves and black pepper
- 1 tbsp chopped fresh parsley
- 2 9" unbaked pie shells
- Preheat oven to 425 deg F.
- Heat oil in a large skillet, and brown the ground meat with the garlic and onion until the onions are limp. Stir in mushrooms. Cook, stirring, for 2-3 minutes. Add stock, breadcrumbs, and spices. Cook, stirring occasionally, for about ten minutes. Discard bay leaf. Stir in parsley.
- Spoon mixture into pie shell. Cut decorative vents into second pie shell. Place over filling and crimp edges. Bake in 425 deg F oven for 15 minutes. Reduce heat to 350 deg F, and bake for another 10-15 minutes, or until pastry is golden brown.
