Harvest Pumkin Chocolate Chip Cookies
- Cookie:
- 1 cup sugar
- 1 cup solid pack pumpkin
- 1/2 cup shortning
- 1 tablespoon orange zest
- 2 cups all purpose (self rising)flour
- 1 teaspoon baking powder
- 1 teaspoon ground cardomon
- 1/4 teaspoon ground cloves
- 1/2 cup mini chocolate chips
- 1/2 cup chopped hazelnuts (optional)
- Icing:
- 1/4 cup butter or margarine
- 2 cups confectioners sugar
- 1 teaspoon vanilla
- 1 - 2 tablespoons milk
- Heat oven to 375 degrees. Mix sugar, pumpkinm, shortening and orange zest till creamy. Stir in flour, baking powder, cardomon and cloves. Stir in chocolate chips and nuts.
- Drop dough by teaspoonful on to baking stone of parchment paper lined cookie sheets. Bake until lightly brown about 8 to 10 minutes. Remove immediately from stone and cool. Spead with icing.
- Icing:
- Heat butter or margaring in 1 1/2 quart saucepan until golden brown. Add in confectioners sugar a bit at a time using a wire wisk to blend. Add in vanilla and milk until smooth.
