Shrimp With Tequila Lime Cream Sauce
- 3 ounces Butter
- 2 ounces olive oil
- 1 cup onion; - diced
- 1 Tbl. crushed red pepper
- 4 oz. tequila
- 1-1/2 pound jumbo-11-15shrimp ; - peeled and deveined
- 2 teaspoon lime zest
- 12 ounces heavy cream
- 1/4 cup lime juice; - from one whole lime
- 1/2 tsp.Salt; - to taste
- 1 tsp. black pepper; - fresh ground
- 1/2 cup finely chopped fresh cilantro
- 1 tablespoon tequila; - to finish
- Melt butter in pan with oil. Saute onions and crushed red pepper lightly then add shrimp. Continue to saute until shrimp turn a pink color. Flame with the tequila remove the shrimp from pan and cover. Add the lime zest and heavy cream to the pan then reduce the sauce over medium heat. The sauce should boil lightly and begin to thicken a little. Return shrimp to pan add seasoning to taste and lime juice with a splash of tequila and add cilantro then warm to finish.
