Enchilada Casserole
- 2 lb. hamburger
- 2 small cans tomato sauce
- 1 can black olives, sliced
- 2 small cans sliced mushrooms
- 2 pkg. dry taco seasoning
- 1 pkg. soft flour taco shells
- 1 lb. sharp Cheddar cheese, grated
- In a large skillet, brown hamburger. Drain off fat.
- Add taco seasoning and tomato sauce.
- Mix well. Grease a 9 x 13-inch cake pan. Place a layer of taco shells in bottom of pan, cutting to fit.
- Spread 1/3 of the following ingredients over them:
- meat, olives, mushrooms and cheese.
- Make second and third layers, starting again with the taco shells and ending with cheese.
- Bake in a preheated 350u0b0 oven for 30 to 40 minutes or until meat is hot in center.
- Allow to stand for 5 minutes before serving.
- Cut into squares and serve.
- A tossed salad goes good with this meal.
