Fat-Free Muffins
- 2 1/2 c. flour
- 1/2 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt (optional)
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 1/2 c. fresh or frozen fruit (blueberries, sweet cherries, mashed bananas, apples, etc.)
- 8 oz. plain nonfat yogurt
- 1/2 c. egg substitute
- 1/2 c. unsweetened applesauce
- 1/2 c. raisins
- 1 tsp. vanilla
- Preheat oven to 350u0b0.
- Spray a 12-cup muffin pan with nonstick cooking spray.
- In medium bowl, combine flour, sugar, cinnamon, salt, baking soda and baking powder.
- In a large bowl with wire whisk or fork, mix fruit, yogurt, egg substitute, applesauce, raisins and vanilla until well blended.
- With spoon, stir flour mixture into fruit mixture just until flour is moistened.
- Spoon into pans.
- Bake 20 minutes or until toothpick inserted in center of muffin comes out clean.
- Cool 10 minutes.
- Remove from pan. Makes 12.
- These freeze well.
