Tom Yam Kung
- 2 cups of water
- 1 stalk of lemongrass (cut into 1" pieces)
- 1/4 cup sliced galangal
- 1/2 tbsp shrimp chilli paste
- 5 shrimps (take heads off and keep)
- 1/4 cup sliced onion
- 1/4 cup sliced tomatoes
- 1/2 cup sliced mushrooms
- 2 tbsp fish sauce (or soy sauce)
- 1/4 tsp salt
- 1/2 tsp sugar
- 2 tsp lime juice
- 1 tbsp chopped spring onion
- 2 leaves of thai parsley
- 1 stem of coriander
- 3 kaffir lime leaves
- 1-5 hot chillies sliced
- Boil water in a pot. Add lemongrass, galangal, shrimp chilli paste, shrimp heads and onions. Cook until fragrant. Add tomatoes, shrimp, and mushrooms and flavor with fish sauce, salt, and sugar. Stir thoroughly. Finally add lime juice, spring onion, thai parsley, coriander and lime leaves. Add chillies to taste. Serve with rice.
