Sante Fe Soup
- 1 lb ground beef
- 1 chopped onion
- 2 pkgs taco seasoning
- 2 pkgs dry Ranch dressing mix
- 1 can Rotel tomatoes
- 1 can petite diced tomatoes
- 1 can black beans
- 1 can kidney beans
- 1 can pinto beans
- 2 cans shoe-peg corn
- Water (I use about 3 or 4 cups. Use however much you want to get it
- as thick or thin as you want it.)
- Fritos corn chips
- Shredded cheese
- Sour cream
- Brown ground beef and onion, drain. Add dry taco seasoning and Ranch mix. Add a cup or 2 of water, stirring until mixes are dissolved. Put in a large pot and add the canned ingredients. Let simmer for a little while, adding more water if you like it thinner. After dipping, top with Fritos, cheese and sour cream as you like. (You can use mild or extra hot Rotel tomatoes and mild or spicy taco seasonings to suit your taste.)
