Tuscan Hummus
- 3 garlic cloves
- 1 15 oz can cannellini beans
- 1/4 cup tahini
- 1/8 cup lemon juice
- 1/2 tbsp soy sauce
- 3/4 tsp salt
- 3/4 tsp ground cumin
- dash ground coriander
- dash cayenne pepper
- 1/8 cup cold water
- In a food processor, process garlic cloves until finely minced. Add the beans and pulse the machine a few times to chop them coarsely. Then, with the machine running, puree them while you slowly pour the tahini through the feed tube and then follow with the soy sauce, lemon juice, and olive oil. Stop the processor to scrape down the sides of bowl and then add the salt, cumin, corriander, and cayenne. Process thoroughly. Add the water through the feed tube and process until very smooth.
