Baked Brie In Puff Pastry

  1. Preheat oven to 400 degrees.
  2. Roll the puff pastry out to a thickness of 1/8 inch. Cut 8 circles to the exact diameter of the cheese rounds. Cut 4 strips of pastry as wide as the cheese's height about 10 inches long. Place a brie on one round of dough, and place a second on top. Brush the side of the cheese with the egg wash, then wrap a strip of pastry around the cheese , pinching the upper and lower seams together. Repeat this with the remaining cheeses, brush the exteriors with egg wash, place on a lightly buttered baking sheet, and bake until golden brown.
  3. Toss almonds with the brown sugar, place on a baking sheet, and bake for 10-15 minutes, or until golden brown. Serve the baked brie with the toasted almonds sprinkled on top and garnished with the apple wedges and mint.
