Cucumber Gazpacho With Cilantro And Yogurt
- 1 English cucumber, chopped large, reserve 1" piece
- 1 garlic clove, halved
- 1/2 cup cilantro
- 2 tablespoon lime juice
- 1/4 cup sour cream
- 3/4 cup greek yogurt
- 1/4 cup mayonnaise
- 2 stalks green onion, cut to 3" lengths
- 4 dashes hot sauce
- 1/8 teaspoon chili flakes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 teaspoon coriander
- Place first 14 ingredients (up to and including coriander) in a blender and blend until smooth. Refrigerate until serving.
- Prep garnishes, which may include: cilantro, green onion, lime zest, micro greens, shrimp, flower petals, finely diced cucumber.
- Pour or ladle into chilled bowls or glasses, garnish and serve immediately.
