Broccoli-Cheddar Soup Made With Yogurt
- 3 qttater + 3/4 C Water
- 6 Ctmall Fresh Broccoli Flowerets
- 1/2 ttalt
- 1 t tutter
- 1/2 ttried Whole Oregano
- 1 Cthopped Onion
- 1/4 ttried Whole Thyme
- Garlic Clove -- minced
- 1/8 ttlack Pepper
- 1 Ctlain Low-Fat Yogurt
- 1/8 ttround Red Pepper
- 2 cansthicken Broth (10-1/2 oz each)
- 1 Ctheddar Cheese
- Boil 3 quarts water in a large pot;
- Add broccoli and cook 7 minutes or until tender.
- Drain and set aside.
- Coat a large saucepan with cooking spray.
- Add butter and place over medium heat until melted.
- Add onion and garlic; saute 5 mins or until tender.
- Put half of the broccoli and onion mixture in a food processor and process until smooth, scraping sides of processor bowl occasionally; Add remaining broccoli and set aside.
- In a large pot, heat yogurt and flour, stirring constantly with a wire whisk until combined.
- Add broth and next 6 ingredients; stir well.
- Cook over medium heat for 20 mins or until thickened and bubbly, stirring constantly.
- Add broccoli mixture; stir well.
- Add 3/4 cup cheese, stirring until melted.
- Ladle soup into bowls and top with remaining cheese.
