Broccoli-Cheddar Soup Made With Yogurt

  1. Boil 3 quarts water in a large pot;
  2. Add broccoli and cook 7 minutes or until tender.
  3. Drain and set aside.
  4. Coat a large saucepan with cooking spray.
  5. Add butter and place over medium heat until melted.
  6. Add onion and garlic; saute 5 mins or until tender.
  7. Put half of the broccoli and onion mixture in a food processor and process until smooth, scraping sides of processor bowl occasionally; Add remaining broccoli and set aside.
  8. In a large pot, heat yogurt and flour, stirring constantly with a wire whisk until combined.
  9. Add broth and next 6 ingredients; stir well.
  10. Cook over medium heat for 20 mins or until thickened and bubbly, stirring constantly.
  11. Add broccoli mixture; stir well.
  12. Add 3/4 cup cheese, stirring until melted.
  13. Ladle soup into bowls and top with remaining cheese.
