Vegetable Baked Ziti
- 1 pkg. frozen leaf spinach
- 1 pkg. frozen broccoli cuts
- 12 oz. skim Mozzarella cheese, sliced
- Ricotta cheese
- 1 jar Prego spaghetti sauce
- 4 c. cooked ziti
- Parmesan cheese, grated
- 8 oz. skim milk
- Preheat oven to 400u0b0.
- Steam spinach and broccoli until thoroughly thawed.
- Pour sauce on the bottom of casserole dish. Spread a layer of cooked ziti, followed by a layer of spinach, a layer of broccoli, sliced Mozzarella and several spoonfuls of Ricotta cheese.
- Pour sauce generously over final layer, then repeat layers.
- Spread last layer of sauce, then sprinkle Parmesan cheese on top.
- Cover with foil and bake 45 minutes.
- Remove foil and bake an additional 15 minutes.
- Serve with garlic bread.
