Shrimp Fritters

  1. Whisk the dry ingredients together in a medium bowl. Stir
  2. in shrimp, corn, pimentos,
  3. scallions and egg. Add 1/2 cup
  4. buttermilk in; then enough to
  5. to make a stiff batter. Don't
  6. overmix.
  7. Pour oil in a cast iron skillet, 1 inch deep and heat oil to 350 degrees over medium
  8. heat. Working in small batches, drop batter in by heaping teaspoon fulls and
  9. fry fritters until they are
  10. golden brown, flipping them
  11. once. This will take about
  12. 2 to 3 minutes. With a slotted
  13. spoon or spider, remove fritters from oil and drain on
  14. wire rack set over paper towels. Serve them while still
  15. hot with your choice of
  16. dipping sauce. Enjoy!!
