Shrimp Fritters
- 1-1/2 cup all purpose flour
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dry mustard
- 1 cup cooked shrimp, chopped
- 1/2 cup frozen corn kernels,
- thawed
- 2 scallions, minced
- 2 tablespoons chopped
- pimentos, drained
- 1 large egg, lightly beaten
- 3/4 cup buttermilk (approx)
- Vegetable oil for frying
- Whisk the dry ingredients together in a medium bowl. Stir
- in shrimp, corn, pimentos,
- scallions and egg. Add 1/2 cup
- buttermilk in; then enough to
- to make a stiff batter. Don't
- overmix.
- Pour oil in a cast iron skillet, 1 inch deep and heat oil to 350 degrees over medium
- heat. Working in small batches, drop batter in by heaping teaspoon fulls and
- fry fritters until they are
- golden brown, flipping them
- once. This will take about
- 2 to 3 minutes. With a slotted
- spoon or spider, remove fritters from oil and drain on
- wire rack set over paper towels. Serve them while still
- hot with your choice of
- dipping sauce. Enjoy!!
