Marie'S Chicken Stew
- 1 lb. boneless chicken thighs
- 1 28 oz. can diced tomatoes with juice
- 1 can organic red kidney beans
- 1 large parsnip
- 3 medium carrots
- 3 celery stalks
- 3 large shallots
- 1 yellow bell pepper
- 2 large garlic cloves minced
- 2/3 c. red wine
- 14 oz. chicken broth
- 1/2 c. fresh basil
- 2 TB fresh thyme or 1 t. dried thyme
- Salt and Pepper to taste
- Shaved parmesan
- Cut all vegetables into bite size pieces and saute in olive oil about 5 minutes. Add chicken thighs into bite size pieces and remaining ingredients, EXCEPT kidney beans. Simmer until chicken is tender about 25 minutes. Add beans and simmer 10 minutes. Serve with crusty bread and shaved parmesan.
