Cabbage With Vinegar(Cavolo Con Aceto)

  1. Trim
  2. bottom
  3. off
  4. cabbage and remove any tough outside leaves.
  5. Slice
  6. cabbage
  7. in
  8. thin
  9. 1/8-inch slices.
  10. Clean and slice
  11. onion.
  12. In
  13. large
  14. skillet heat oil and fry bacon until very
  15. crisp.
  16. Remove
  17. from pan and reserve.
  18. Place cabbage and onion
  19. slices
  20. into
  21. hot
  22. oil
  23. and saute until cabbage is well coated
  24. with oil and a little limp.
  25. Add salt and pepper; cook on a medium-low heat until very tender.
  26. Add vinegar and cook an additional 5 minutes.
  27. To serve, crumble reserved bacon and sprinkle on top of cabbage.
  28. Makes 8 servings.
