Tasty Quinoa Loaf
- 2 cups quinoa, cooked
- 1-15oz. can garbanzo beans, frained and rinsed
- 3/4 cup rolled oats
- 1/2 cup water, plus 3 Tbs
- 8 oz. white button mushrooms, sliced
- 1 cup green peas, frozen
- 1/2 med. red onion, chopped
- 10 sundried tomatoes, soaked in wwater for 1 hour, drained and chopped
- 1/2 cup fresh parsley, chopped
- 1 Tbs fresh thyme, minced
- salt & ground pepper to taste
- Coat loaf pan with Pam Spray. Preheat oven 350. Now add mushrooms and 1 Tbs of water in a skillet and cook thoroughly. Stir consistently and heat needs to be on medium-high. Cook the mushrooms for approx. 7 min. After that you will need to add 2 more Tbs of water slowly as each Tbs. evaporates. Once the mushrooms are cooked put them in a bowl and set them aside for now.
- Mix onion, tomatoes, peas, salt , pepper, bean mix, parsley, quinoa. Add mix to mushrooms and stir well. Now salt and pepper to taste the mixture. Add to pan. Bake the mixture for 60 to 75 min. until the loaf is firm. The loaf should be a golden born color.
