Shrimp Burgers
- 1 lb of Pink Shrimp (peeled and deveined then chopped up)
- 1/2 green bell pepper (diced)
- 1/2 red bell pepper (diced)
- 1/4 white onion
- 2 cloves or garlic (minced)
- 1 package of sauteed white mushrooms (minced)
- 1 cup of whole wheat bread crumbs
- 2 tbsp of red pepper flakes
- 2 large eggs
- 1/2 cup of cornmeal
- 6 toasted whole wheat buns
- 1 cup of lite mayonnaise
- 1/4 cup of sweet relish
- 1 tspn lemon juice
- Lettuce
- Tomato slices
- 3 tbsp Olive oil
- Combine first 8 ingredients and one egg in a bowl and mix well. Let sit in refrigerator for at least 1 hour to firm up.
- Place remianing egg in a bowl and cornmeal on a plate.
- Remove shrimp mixture from the refrigerator and make medium sized patties. Place the patties in the egg wash and then into the cornmeal to coat the outside of the patty.
- Place the frying pan on med-high and place 3tbsp of oil in the pan. place each patty in the pan and cover (feel free to add more oil if needed). Cook for 5 minutes on each side or until each side is brown.
- Remove patties from the pan and place on papertowels to catch the oil.
- In the mean time make the tartar sauce by mixing the mayonnaise, relish and lemon juice in a bowl.
- Place one patty on each toasted whole wheat bun, with lettuce, tomato and tartar sauce.
