Bok Choy
- 2 bunches of bok choy
- 2-3 bunches of green onions
- 1/2 c melted butter
- 4 pkgs Ramon noodles broken into pieces (toss out the seasoning)
- 1/2 c sunflower seeds
- 1/2 c almond slices
- 1 c oil
- 1/2 c sugar
- 1/4 c vinegar
- 2 T soy sauce
- Part 1
- Cut bok choy and green onions into eatable pieces (stems and leaves). Set aside.
- Part 2
- In a pan melt 1/2 c butter and then lightly brown the ramon noodles, sunflower seeds and almond slices. Allow to cool before adding to the bok choy and green onions.
- Part3
- Dissolve vinegar, soy sauce and sugar in a bowl and then add the oil. By adding the oil last it helps the sugar dissolve better.
- Mix all ingredients together prior to serving to keep the noodles, sunflower seeds and almond slices fresh and crunchy. If needed all
- the ingredients could be prepared a day in advance, just keep all of them separate until ready to serve.
