Spicy Grilled Chicken
- Chicken- 1kg skin on
- sweet chilli sauce- 2 to 3 tbs
- rice wine vinegar -1 tbs
- orange juice - 1 tbs
- pepper powder - 2 tsp
- Thyme - few sprigs
- soy sauce - 1tbs
- for stuffing - cranberries,cubed potatoes, Thyme, carrots and garlic
- Mix all the ingrediants and rub on the chicken as well as under the skin after lifting it. Take care to tie the wings and legs together and tuck it under the chicken so that the shape in intact. stuff the chicken with stuffings. Marinate overnight.
- Allow the chicken to thaw before baking and grilling for atleast 3 hrs.
- Heat the oven to 180 degrees( fan off) place the chicken on a roasting tray lined with foil . Cover the tray with aluminium foil and bake for 40mins.
- Switch the oven to grill mode. Remove the foil and grill the chicken for 20 mins basting it once with the remaining marinade. Once done , cover it again with foil and allow it to rest. Serve hot with gravy and roasted vegetables.
